No similar materials

Hedgehog cake is a fun cake for a children's party. Any housewife can handle this recipe. There are a great many variations of this cake, but the one I offer is my favorite. This is a nutty anthill and not just nutty, but very nutty!

So let's get started! We will prepare everything you need.

Beat warm and soft butter with salt and sugar.

Add eggs and beat until smooth.

Add flour sifted with baking powder and quickly make a soft dough. Do not knead for a long time, because the dough will come out tight and the cookies will be hard, but we want crumbly ones.

Place the finished dough in the refrigerator for 1 hour.

Pass the chilled dough through a meat grinder and place on a sheet. Bake at 170 degrees until golden brown. This will take approximately 20 minutes.

Cool the finished cookies.

Let's prepare the nuts. Sort the nuts and fry. I will do this in a multi-oven, I will fry the nuts at 200 degrees for 4 minutes.

Sort and rinse seedless raisins. Blot with napkins.

Grind some cookies into fine crumbs to even out the hedgehog.

Break the rest of the cookies into small pieces with your hands.

Place the nut mixture in a bowl.

Add raisins and broken cookies and mix everything.

Let's prepare the cream. The butter should be at room temperature, just like boiled condensed milk.

Beat the butter with a mixer with condensed milk until smooth and add most of the cream to the mixture of cookie nuts and raisins, and a smaller part of the cream to the fine cookie crumbs.

Using the nut mixture, form the body of a hedgehog in the form of a drop on a cake plate.

Level with a mixture of fine crumbs and cream.

Sprinkle the hedgehog's face with cocoa powder through a strainer. Glue the eyes and nose from chocolate drops with cream.

To decorate the hedgehog, dissolve coffee in 2 tablespoons of cold water, add 2 tablespoons of condensed milk and vegetable cream. Beat at high speed and the cream is ready.

Place the cream in a pastry envelope and make needles for the hedgehog.

Decorate the hedgehog with flowers and mushrooms. Make a clearing from vegetable cream tinted green and whipped. Place leaves from the pastry envelope.

You can put the kettle on and call the kids!

You probably want to see the cut????? No, my hand won't rise. . . I'll go see who's ringing the doorbell. It’s always such a hassle with children’s cakes, no one wants to cut off the bear’s head, or break the doll on the cake, let them better figure it out themselves, without me!

You can please your child with a delicious dessert any day, without waiting for a holiday. Hedgehog cake is not very difficult to prepare, but it is incredibly tasty and will surely appeal to children and adults. The main highlight of the cake is its appearance.

There are two ways to prepare the delicacy. The first involves baking a biscuit, while the second does not require baking (dry crumbly cookies are used as the basis). In general, these two recipes are similar, only the first one will require more time and skill. The cooking process will take about 2 hours. In addition, delicious dough is the basis for any dessert; if possible, it is better to prepare the cake yourself.

Recipe for “Hedgehog” cake with baking biscuits

For the dough you will need the following ingredients:

  • 100 g semolina;
  • 300 g flour;
  • 4 medium eggs;
  • 200 g sugar;
  • 300 g sour cream 20% fat;
  • 1 packet of baking powder;
  • 1 packet of vanilla.

For the cream you need to take the following products:

  • 1 liter of milk;
  • 150 g sugar;
  • 3 tablespoons of semolina;
  • 300 g butter;
  • 2 full tablespoons of flour;
  • 1 chicken egg.

To decorate the cake you will need the following ingredients:

  • 50 g poppy seeds;
  • 2 teaspoons cocoa powder;
  • 1 bag of peeled sunflower seeds;
  • 2 teaspoons cocoa powder;
  • raisins to make a nose and eyes for the hedgehog.

Cake making method

We begin the work by preparing the dough for the cakes. To do this, beat the eggs with sugar and vanilla until a white thick foam forms. Add one packet of baking powder and sour cream to the mixture. Mix everything carefully or beat with a mixer. Add 100 g semolina and 300 g flour. Mix everything well. The dough is ready.

Then you need to bake two cakes (one slightly larger, the other smaller), for which you should divide the dough, most of which should be placed on a baking dish, previously greased with butter. The mold should be placed in the oven for 20-25 minutes. The readiness of the cakes can be checked using a toothpick or match. To do this, stick it into the cake: if it is ready, the toothpick will remain dry, without sticking dough. The second cake is baked in the same way.

While the finished cakes are cooling, you can start preparing the cream. To do this, beat the egg, sugar and 150 g of milk. Add flour little by little, in small portions, so that lumps do not form. And the rest of the milk is added to the resulting slurry, the mixture in a saucepan is put on fire. The cream must be stirred constantly until it thickens. The main thing is that it doesn’t burn. Immediately after boiling, the cream must be removed from the heat.

After the sweet mass has cooled, add soft butter to it and mix everything with a mixer until smooth.

The crucial stage begins when the cake is formed. The main thing is to approach this matter creatively.

The Hedgehog cake will definitely delight children with its taste.

It is advisable to make the treat not only tasty, but also funny. Your child may want to help you prepare dessert.

When finishing preparing the cake, you need to take a larger cake layer and cut off the edges so that it becomes an almond-shaped shape. Then this cake needs to be thoroughly greased with cream and left for a while. After this, take the second cake layer and crumble it into large pieces, fill them with most of the custard, mix well and place on the first cake layer, forming a hedgehog figurine with a nose and ears.

To decorate, mix 2 tablespoons of cream with cocoa powder to obtain a dark mass, which should be used to cover the hedgehog’s face; its body should be spread with white cream. This part of the cake should be generously sprinkled with poppy seeds and seeds should be inserted into it, which will act as “needles”. And from raisins you can make eyes and a nose for a hedgehog. For these purposes, you can also use prunes and candied fruits or small sweets.

There are cakes where hedgehog “needles” are made from the same chocolate custard using a pastry syringe with a special attachment. True, such a cake will turn out to be quite high in calories. When baking, you can add canned cherries to the cakes, then the hedgehog comes out with a surprise inside. You can experiment with the dough in different ways.

The above recipe is not entirely easy to implement. There is a lightweight version of the cake without baking, which can be made in an hour. This option is perfect for busy mothers who have little free time.

Cake "Hedgehog" without baking

Ingredients needed: 1 kg of crumbly fresh cookies, 2 cans of condensed milk, 200 g of sour cream, 200 g of powdered sugar, 3 tablespoons of cocoa powder, 200 g of butter, a bag of peeled sunflower seeds, chocolate-covered peanuts for decoration.

First, knead the cookies thoroughly. This can be done using a blender (coffee grinder) or a regular mortar. The ingredient should look like small crumbs. Then cocoa powder and powdered sugar are added to the cookies, and condensed milk is gradually poured into the resulting dry mass. Softened butter and sour cream are also added here. The dough should be quite thick and flexible. If it turns out liquid, you need to add crushed cookies.

Then comes the main moment, namely sculpting the hedgehog. The resulting mass should turn out to be a hedgehog without “needles.” After preparing the base, be sure to roll the hedgehog in poppy seeds (until completely covered) and begin making “needles.” For this, peeled seeds are used again. A nose and mouth are made from chocolate covered peanuts. Raspberries and a variety of candies and cookies in the shape of mushrooms will look very good on such a cake. It will seem that the hedgehog has already been to the forest and harvested. You need to be creative when making a cake.

Thanks to a flight of fancy, the cake will not only turn out amazingly tasty, but will also delight children with its appearance. This dessert can also be an excellent holiday treat for a child’s birthday, delighting guests with taste and appearance. The main thing is to learn how to give the desired shape to the cake. Everything will definitely work out!

Bake a chocolate sponge cake. To do this: sift the flour together with cocoa powder. Mix eggs, yolks, sugar, salt with a whisk and heat in a water bath to about 40 degrees, pour into a mixer bowl and beat until the volume increases 2-3 times (beat at high speed for at least 10-13 minutes). Add the sifted flour and cocoa into the dough in 2-3 additions, gently mixing with a spatula. Melt the butter until liquid, add part of the dough to it, mix well and pour into the main dough, mix. Lightly grease the baking dish with butter, place the dough in it (it should flow like a ribbon) and bake at 180 degrees for 30-35 minutes. Remove the cake and cool completely on a wire rack.

Prepare the impregnation for the cakes. Pour sugar into a saucepan, add water, bring to a boil and cook for 5 minutes. Add rum, remove from heat and cool. Prepare cream 1, it will be inside the cake. In a mixer bowl, beat a little mascarpone cheese and gradually add boiled condensed milk to it, beat well. Prepare cream 2, it will cover the outside of the cake. Lightly beat the butter, softened in advance at room temperature, until fluffy with a mixer, gradually add powdered sugar and finally add cocoa powder.

First, cut off the sides of the sponge cake a little, giving it a shape similar to a hedgehog. Crush all the scraps into fine crumbs. Using a pastry ring, cut out a round center (no need to crumble it). Cut the entire base lengthwise into three layers.

Start assembling the cake. Place the bottom crust on a plate. Cut off thin circles from the cut out center - bottom and top. Place the bottom in the bottom cake. Soak the cake, spread an even layer of cream 1. Place the second cake on top, saturate it too, cover with cream. Place the third cake layer on top and soak. Place the Mushroom cookies in the middle, leaving a little for decoration, and cover with the top cut from the middle. Mix the remaining biscuit crumbs with part of the cream 1 to form a viscous mass, and form the back of a hedgehog from it. Leave just a little of this dough for the ears and eyebrows.

Cover the entire cake (except for the hedgehog's face) with cream 2 in an even, thin layer. Cover the face with cream 1. Cream 1 should be lighter than cream 2. Place the cake in the refrigerator for 1 hour. Place the remaining cream 2 in a pastry bag with a suitable nozzle and place it on the hedgehog’s body in the form of imitation needles. Make ears and eyebrows from the dough. The eyes and nose can be made from black currants or chocolate dragees. Place in the refrigerator for 4-5 hours.
