Oatmeal cookies with dried cranberries. I decided to bake oatmeal cookies according to the recipe from the package of oatmeal brand “S. Pudov". After reading it, I doubted it, because in my opinion the indicated amount of butter is not enough for such an amount of flour, and there is no egg... But I think manufacturers cannot print an untested recipe. And I decided to make cookies according to the recipe, but adding some dried cranberries and sesame seeds, flax and sunflower seeds. I decided to enrich it with useful supplements. And in the process of preparing the dough, I was faced with the fact that they really missed something in the recipe. After mixing the ingredients, I got a crumb that didn’t want to turn into dough, which had to be rolled out and cookies cut out of it. I don't think my supplements could have made such a significant difference. I ended up having to add milk and vegetable oil. Let’s just say that it didn’t turn out to be a “pancake-lumpy” situation; we didn’t have to throw away the dough. The cookies turned out to be medium crumbly and pleasant to the taste.

Ingredients for cookies with my corrections:

  • 100 g oat flour
  • 200 gr premium wheat flour
  • 100 g sugar
  • 50 grams of liquid honey
  • 50 g butter or margarine
  • 75 ml. milk
  • 1 tbsp. vegetable oil
  • 3 g baking powder
  • a pinch of salt
  • 50 g dried cranberries (optional)
  • 1 tsp flax seeds (optional)
  • 1 tsp sesame seeds (optional)
  • 1 tbsp. sunflower seeds (optional)

Method for making oatmeal cookies with cranberries:

Cut the dried cranberries into smaller pieces.

Beat softened butter with sugar and honey.

Mix wheat flour, oat flour and baking powder

Add flour, cranberries, and seeds to the butter mixture.

Stir

Add milk and mix. The dough will be somewhat sticky. Next, add a tablespoon of vegetable oil and knead the dough. It turns out to be quite elastic.

Turn the oven on 180°

Roll out the dough on a floured cutting board or table to a thickness of 1 cm and cut out cookies using cookie cutters or a glass.

We mold the remains from cutting into a ball and let it rest for 15 minutes, and only then repeat the procedure of cutting out cookies.

Place the cookies on a baking sheet lined with baking paper or greased with butter.

I brushed the cookies with milk and sprinkled them with sesame seeds.

You may not believe me, but I have never baked not only shortbread, but even simple butter cookies. Yesterday, in search of “something simpler”, I dug up a cookie recipe from accountant Sonya buxgalter_sofi and got down to business. I haven’t regretted it for a minute - it couldn’t be easier to cook, and it turns out very tasty.

It’s just that Sonya and I disagreed on the quantity - she got 35-45 pieces, and I got about 25. Apparently, she cut them thinner.

To prepare cookies, Sonya advises taking

170 g soft butter
60 g (1/2 tbsp.) powdered sugar
50 g (1/4 tbsp.) sugar
1 teaspoon vanilla or 10 g vanilla sugar
1 egg
1.5 tbsp sour cream
zest of one lemon
330 g (2+1/3 tbsp.) flour
70 g (1/2 tbsp.) cornstarch*
100 g pistachios (dry and crush into large pieces)
75 g dried cranberries or cherries

I didn't have cornstarch, so I naively replaced it with potato starch.
And instead of pistachios I used walnuts.

2 baking trays lined with baking paper
One baking sheet was enough for me.

Oven temperature - 170 degrees
Baking time 20 min.



Beat butter, powdered sugar, vanilla sugar, zest, egg and sour cream with a mixer until creamy for a couple of minutes.

Add flour and starch to the resulting mass and knead for another 2 minutes.

Divided the dough into 2 parts.
Spread the dough on cling film and roll 2 sausages, approximately 20 cm long. Place the sausages in the freezer for 1 hour.

Using a sharp knife, I cut cookies (1.5 cm wide) from the frozen dough and placed them on a baking sheet.




Bake in a preheated oven for 30 minutes.

Cool the finished cookies on a wire rack.

When warm, the taste of starch is very clearly present, but when the cookies cool, this unpleasant moment disappears. The whole point, apparently, is my stupid replacement with potato starch. You need to look for corn. Overall, the recipe is excellent, and as always, many thanks to Sonya!!!

First you need to prepare the base of cranberry cookies - shortbread dough according to the most common classic recipe. This dough can often be found in recipes called “1-2-3”, that is, for it you need to take 1 part sugar, 2 parts butter and 3 parts flour, and an egg for binding.


Grind cold butter into crumbs with sugar and flour.



Add the egg and orange zest.



Mix everything very quickly, gathering it into a ball - so as (if possible) to prevent the butter from melting.
The resulting dough may even seem uneven, that's okay. Wrap the dough in film and place in the refrigerator for about an hour.



For the filling you need fresh cranberries, but you can also use frozen ones, but they will need to be completely thawed and all the juice drained, otherwise the filling will be too liquid.



Now everything is completely simple - you just need to grind the cranberries, nuts and sugar together in a blender.



All that remains is to “put it all together.” I advise you to divide the dough into two parts.

Roll out the dough into a rectangle 3-5 mm thick. For convenience, you can do this using cling film (or paper).



Spread the nut and berry filling evenly over the entire surface of the dough.



Roll up.



Wrap the resulting rolls again in cling film and place in the freezer for at least 4 hours.
The “raw” roll can be stored in the freezer for up to three months. When you decide to bake cookies, you need to take out the frozen semi-finished product and let it sit for a while and warm up a little (this will make it easier to cut) while the oven preheats to 180 degrees.
