Curd with raisins. Curd cake with raisins

10.02.2024

Good day. I, like any mother, face the question every day - how to feed my child healthy food. But that's not all, children's dishes must also be tasty and look appetizing, otherwise my kids simply refuse to eat them. One of their least favorite foods is cottage cheese; they refuse it in its raw form. But since this fermented milk product is very valuable for a growing organism, I use a trick - I prepare a cottage cheese casserole with raisins and serve it as a pie; this dish is always eaten without a trace, and not only by children.

Before we move on to the recipe for cottage cheese casserole with raisins, let's talk about what benefits it can bring to the body.

  • One of the main advantages of this product is the content of easily digestible proteins and milk fat. This is especially important in children's and medical nutrition.
  • The essential amino acids contained in cottage cheese - tryptophan and methionine - help normalize the functioning of the central nervous system and digestive organs.
  • The balanced content of trace elements and minerals such as calcium, phosphorus, magnesium and iron is beneficial for teeth, bone tissue, heart muscle and respiratory system.
  • Cottage cheese contains B vitamins, which protect us from atherosclerosis and have a beneficial effect on the formation of hemoglobin in the blood.
  • Raisins in symbiosis with cottage cheese enhance its positive effect in terms of normalizing the functioning of the digestive, nervous, cardiovascular, skeletal, respiratory systems, and the potassium contained in the dried fruit helps improve the functioning of the genitourinary system and get rid of toxins.

This dish can also be an excellent substitute for dessert and can be served both hot and cold.

Ingredients of the dish.

  • Cottage cheese - 1 kg.
  • Egg - 3 pcs.
  • Semolina - 100 g (7 tbsp).
  • Sugar - 100 g (1/2 tbsp).
  • Salt - 3 g.
  • Butter - 50 g.
  • Sour cream - 40 g (2 tbsp).
  • Raisins - 150 g (1 tbsp).

Recipe of dish.

Let's prepare the ingredients.

The photo shows only the main products, which you can experiment with if you wish to find the perfect recipe. For those on a diet, butter and sour cream can be omitted, eggs and sugar can be replaced with bananas, and semolina with starch.

We sort out the raisins and wash them thoroughly.

Place the dried fruit in a bowl and steam in boiling water.

Place the cottage cheese in a deep plate or bowl, break the eggs, and mix with a blender with a chopping attachment.

If you do not have this “miracle machine”, to obtain an airy, homogeneous product, it is better to rub large grains of cottage cheese through a sieve, beat eggs together with sugar separately until a white fluffy mass, mix sour cream with semolina. Then combine all the ingredients together, including butter and salt, mixing thoroughly with a spoon.

And I continue...

Gradually add sugar to the bowl, continuing to grind the cottage cheese with a blender.

Gradually add semolina (leave 1 tbsp for sprinkling the mold), without ceasing to stir the curd mass. Since the cottage cheese became crushed and soft, I changed the blender attachment to a whisk.

Add the remaining ingredients to the bowl: butter - 40 g (leave 10 g for greasing the mold), salt, sour cream and mix everything thoroughly.

At this stage, you can optionally add vanillin, cinnamon or other favorite spices. Also, if you are afraid that the product will not rise, add 1-2 teaspoons of baking powder into it (it is better not to add soda, as it will give the product an undesirable aftertaste, which can lead to heartburn).

After mixing all the ingredients, give the mixture 15-20 minutes for the semolina to swell. It is better to cover the bowl with the mixture on top with plastic wrap.

In the meantime, set the oven to preheat to 180 C, grease the mold (mine is 26 cm in diameter) with butter and sprinkle with semolina (1 tbsp) so that the casserole easily comes away from the surface.

After the semolina has swollen, add steamed raisins to the curd mixture (after draining excess water from them).

Pour the mixture into a mold and place in an oven preheated to 180 C for 40-45 minutes. Cooking time depends on the thickness of the casserole (size of pan), power and type of oven.

40 minutes have passed, the top has browned, we check the readiness with a toothpick (stick it into the casserole and take it out, if the stick is dry, the pie is ready).

Remove the pie from the mold, cut into portions and serve with your favorite jam, jam, honey or condensed milk.

Bon appetit!

You will need a kitchen immersion blender. Punch until the curd mass has a consistency similar to cream. If you don’t have a blender, rub the cottage cheese through a fine strainer before using it, maybe several times.

Place the swollen raisins in a colander. Let the water drain. Take a few paper towels and dry thoroughly on all sides. The berries should not be wet.

Add the prepared dried fruits to the curd mass. Stir until the raisins are evenly distributed.
