Usually, quite a lot of yolks, sugar and butter are added to their dough. Today we will do without almost all of this, and, nevertheless, our homemade waffles will be very tasty.

We can also do without wheat flour, but use oatmeal.

To prepare, we need a gadget - a specialized electric waffle iron. Having such similar forms, not in the form of a waffle iron, but simply in the form of silicone or metal forms, you can prepare waffles in the oven, but I don’t have such forms, so I cannot give you advice on choosing the temperature when preparing such waffles in the oven.

Waffles cook very quickly, so this version of waffles can be called an EXPRESS DISH. And I always have eggs, kefir, oatmeal and stevia for them at home.

The waffles are served with fillings from berries, fruits, nut butters and others, and also if the waffles are baked unsweetened, the fillings can be snack foods in the form of pates and boiled, dried meat, fish with sauces.

I served waffles with banana, kiwi, strawberries:

Compound:
- 200 g oatmeal
- 8 egg whites (about 280 g)
- 1 egg yolk (about 15 g)
- 155 g kefir 1.5% - 3.5% fat. or fermented baked milk (in the Bg version, soy milk or soy cheese Tofu, whipped with water to a liquid consistency, soy yogurt)
- 6 tables stevia
- 14 g sugar, 2 tsp.
- 2 g small pinch of salt (for whipping egg whites)
- 1/2 tsp. lemon juice (for whipping egg whites)
- 30 g, 2 tbsp. l. liqueur of any light type Limoncello, Pina Colada, light part of Baileys, etc.
Total: 663 g

Equipment:
- stand or hand electric mixer
- electric waffle iron for Viennese waffles (it has a Teflon coating on the molds)
- silicone spatula
- kitchen scissors

From this amount of products we will get 8-9 waffles, each weighing 64 g -72 g, one waffle from 101 kcal to 114 kcal.
Cholesterol in one waffle is 32-27 mg, sugar is slightly less than 2 g.

COOKING

1. Grind the oatmeal into flour in a coffee grinder, adding the flakes in small portions.

2. Beat 8 whites with a mixer, adding salt and lemon juice; at the end of whipping, add sugar and crushed stevia, bringing the whites in this composition until completely homogeneous.

3. Beat the yolk with a mixer until white.

Combine flour with kefir, yolk, liqueur, stir thoroughly.

Introduce a third of the whites into the dough, mix thoroughly with a spatula, making movements from top to bottom. You can mix a third of the proteins and kefir with flour at the same time.

4. Preheat the waffle iron for at least 10 minutes.

Baking 2 waffles with one load of the waffle iron may take 7-8 minutes. At the end of this time interval, open the waffle iron and remove the waffle; it is most convenient to do this with a wide metal spatula.

5. While the waffles are still hot, trim the uneven edge around the perimeter of the waffle with kitchen scissors.

Place waffles on a wire rack to cool.

Serve with milk, yogurt, sugar-free jam, berries, fruits as a snack, or as an afternoon snack, or treat guests to tea.

P.S. If you use soy milk or Tofu cheese, as well as Bg oatmeal, the waffles will be gluten-free.

P.P.S.There is no need to try to buy oatmeal, as it is prone to oxidation and sometimes makes the product bitter, while ground oatmeal from flakes before use does not have this quality in most cases, unless your oatmeal was too stale.

For the test, you need to take oil at room temperature. It's best if you take it out of the refrigerator in advance. I would not recommend heating cold butter in the microwave, as some of it will quickly melt, while the rest will remain cold and hard.


Soft butter must be ground with sugar. You can use a fork, but why spend a lot of effort if you have a mixer. At low speed, beat the butter and sugar with whisks into a homogeneous and fluffy mass.


Beat in the eggs. My eggs are medium size, about 65 g with shell. Again, beat the dough at low speed with the mixer.


Pour milk into the dough. It should be fresh, not sour and preferably not very cold. Whisk again. Try to do everything at low speeds so that the mass does not fly out of the bowl.


Squeeze the juice into a tablespoon and pour into the dough.


Sift the required amount of flour there with the addition of baking powder.
Mix with either a spoon or a mixer whisk.

The dough for this recipe should be smooth, homogeneous, and as thick as pancakes.


Using a pastry brush, grease the waffle iron with a drop of vegetable oil and heat the device well.


Place the dough in the middle of the mold and close the waffle iron tightly. One waffle requires approximately 2 tablespoons of dough.


Bake Viennese waffles for about 5 minutes, but the baking time will vary for each waffle iron model. Therefore, control the brownness of the waffles. My waffles took about 5 minutes to bake.
From this amount of dough I prepared 10 waffles measuring 10*10 cm.


I'll share one trick. Immediately after baking, the waffles are crispy on the outside and soft on the inside. But once they sit for a little more than an hour, the waffles become soft and that delicious crispy crust disappears.
To keep the waffles crispy, before serving, I recommend placing them on a wire rack (or on a baking sheet) and drying them in the oven at 160 degrees for 4-5 minutes. These waffles will be crispy again, even on the second day.

  • Break the eggs, separate the whites from the yolks. We put the first ones in the refrigerator, and beat the second ones with sugar. You should get a thick white mass.
  • Add vanillin during the process. Heat the butter, combine with salt and milk. We send to the yolks. Mix thoroughly.

  • Pre-sieve the flour and combine with baking powder. Gradually add into the dough. Stir and rub out any lumps.

  • Beat the whites until thick foam, carefully pour into the mixture. Mix with a tablespoon from top to bottom. We do not use a mixer or blender at this stage.

  • Heat the waffle iron, grease it with oil, and distribute the dough.

  • Bake for 2-3 minutes until golden brown.

An amazing recipe for quick, soft, airy, crispy Viennese waffles for an electric waffle iron at home. Very useful in cases where there is very little time left for cooking.

Ingredients:

  • 300 g flour;

I can’t tell you how long I’ve dreamed of making my own waffles. Someone tells stories from childhood about nuts with condensed milk and waffle rolls. My childhood is a mold for lollipops and a large aluminum circle for dumplings.

And here are the waffles! This is completely different.

On the narrow streets of Brussels you are enveloped by the smell of waffles from the windows of shops located on the first floors of houses. Buy a waffle like this, fill it with chocolate, whipped cream, and sprinkle with colored sugar confetti.

But these are all tourist joys.

I wanted to make the same waffles at home. Have a lazy and beautiful Sunday breakfast.

When I got it in my hands, I was so happy that I immediately showed it off on Instagram. Several people wrote to me that they use the same one and, using removable panels, make not only waffles, but also those same nuts with condensed milk, hot sandwiches and even pizza.

I was even more inspired until I received a comment that it was all bullshit and nothing worked. For good waffles you need a real waffle iron, and all these replaceable panels are nonsense, everything sticks to them and turns out ugly.

Of course, I immediately thought that I wouldn’t succeed either. They fooled me, the dough will stick and, look what you came up with, 40 replacement panels will replace everything for you!

But I took a risk and, oh, what nonsense it all turned out to be.

I took the waffle recipe directly from the book that came with the multi-baker. There were four of them, I chose soft Viennese waffles: soft inside and crispy on top. If I understand correctly, Viennese waffles are soft and taste more like pancakes. Belgian waffles are prepared with yeast and this makes them more airy and somewhat donut-like.


Ingredients for Viennese waffles

  • wheat flour - 350 g
  • milk - 200 ml
  • butter - 150 g
  • eggs - 3 pcs.
  • sugar - 100 g
  • baking powder - 10 g
  • lemon juice - 5 ml
  • berries, cream, chocolate, honey - whatever you want to decorate waffles with

Experienced housewives told me that it is better to let the dough sit in the refrigerator for some time. You can prepare it in the evening, put it in the refrigerator, and in the morning all you have to do is bake the waffles.

What amazed me was that it doesn't require any oil at all. In a bunch of recipes on the Internet that I reviewed, the panels are greased with oil and somewhere the finished waffles are actually torn off the panels with a knife.

I don't know what the Redmond multi-baker panels are made of, but not a drop of oil was wasted, and the waffles simply came out. No picking, God forbid.

I decorated the waffles with berries and... sour cream. At first I was upset that there was no cream in the refrigerator, but I didn’t regret the taste at all. Very, very tasty.
